Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon unrefined sea salt
  • 1 teaspoon baking soda mixed with 2 tablespoons lemon juice
  • 2 pasture-fed, free-range eggs
  • 1 1/2 cups pure light coconut milk
  • 1/4 cup applesauce
  • 2 tablespoons raw honey
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 5 tablespoons pure maple syrup


Directions

  1. Preheat waffle iron to desired temperature.
  2. Mix together the flour, baking soda mixture, and salt in a large bowl.
  3. Beat together the eggs, coconut milk, applesauce, honey, vanilla, and cinnamon in a separate
  4. bowl then pour into the flour mixture. Mix batter until well blended.
  5. Ladle the batter into the waffle iron and cook until crisp.
  6. Top each waffle with 1 tablespoon maple syrup.
